Changing one thing at a time is a great way to head towards Zero Waste. Even if you/we never get there completely it’s all a move in the right direction and in our opinion, every little bit helps.
When it comes to breakfast, I’m an egg on toast gal thanks to our amazing chickens, but the rest of the family tends to like muesli, fruit and yogurt so I make our own. This way I know it is a much healthier option and I can buy all my ingredients from places like Bin Inn so I don’t end up with all the plastic packaging.
Here is the tried and true (I’ve used this for over five years) muesli base recipe that I use and which is easy to add all your favourites to. I can't remember where I found it originally but it's a goodie!
As a side note, we have used an Esi Yo yoghurt maker for many years to help reduce all the yoghurt containers we were using. It works great.
HEARTY HOMEMADE MUESLI RECIPE
This makes a big batch so you may want to half the recipe to start with.
Some of the nuts and fruit we use are walnuts, pecans, almonds, cashews; dried - apricots, dates, raisins, sultanas, cranberries; pumpkin, sunflower, and sesame seeds. Change it up each week depending on what's on special or available.
Ingredients:
150 grams Butter
or
2/3 cup cold pressed Coconut Oil
1/2 cup Honey
6 tsp ground Cinamon
5 cups Rolled Oats
Add to suit and chop to the size you like to munch on:
Raw nuts
Dried Fruits
Seeds
Put your oats into an oven proof dish (I use our large roasting dish) and spread across the bottom evenly.
Sprinkle over your raw nuts so there is an even spread (this is how I know how many to add).
Melt your butter/oil with the honey and cinnamon over a low heat until melted and stirring gently until combined.
Pour the mixture over the nuts and oats mix and mix through until it has coated everything evenly.
Bake in oven for 10 minutes.
Remove from the oven and stir it well. If it needs a couple more minutes pop back in the oven but monitor carefully as it burns easily, or leave it to cool if everything is evenly golden brown.
Once cooled, add your seeds and chopped dried fruit to suit your taste.
Store in an airtight container.
